Why Spam Fried Rice? You're not from Hawai'i.
Yes, it's true. I was born and raised in Massachusetts, and only went to Hawai'i for the first time in February 2008 to help campaign for Obama in the primary. Growing up, I didn't know spam was a Hawaiian thing. I just knew that my family ate a lot of it. Spam lo mein, spam noodle soup, spam and eggs, spam with vermicelli and napa cabbage, and spam fried rice, of course. My parents are from Hong Kong, where you can find spam in various dishes at diners. When they first got to Boston, it was a cheap meat. And later when our family was doing better economically, spam had already become a comfort food for me. Spam noodle soup on a cold New England day, home on a snow day...mmmmm... snow days... but that's a different topic.
